Night Market
Today was our departure from Jasper. Our original plan was to start with a hike, drive halfway home, stop for the night, then return home tomorrow. However, when we reached the hiking trail, Amy decided against the hike, so we started our drive earlier than we planned. The GPS said we could be home in time for dinner, but that seemed too exhausting. Since it’s a Sunday, we decided to drive to Vancouver for dinner at the Richmond Night Market. After a few texts, our friends Victor and Phillipa decided to meet us.
Since we were in Alaska last summer, it’s been two years since we visited the Richmond Night Market. There were a few small changes, but our favorite booths were still there. We started the evening with Lamb Bao Buns from Chef James. Along the evening, we had a couple of types of chicken, inari stuffed with raw salmon, some Korean-fusion spicy grilled cheese, and more. We finished with Thai mango with sticky rice. It was a very tasty way to end this trip.
